Chicken salad sandwich

Poached Chicken for Salad

9 sprigs parsley
2 sprigs thyme
1 small sweet onion
1 carrot
1 stalk celery
3 pounds chicken
6 cups chicken broth

Combine everything in one pot and bring to boil.
Remove chicken once its cooked.
Shred chicken and set aside

1 1/2 teaspoons fresh tarragon
2 tablespoon chopped parsley
1 cup mayo
2 teaspoons lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
freshly ground black pepper


In a mixing bowl, toss together the chicken, celery and herbs. Set aside.

In a small bowl, whisk together the mayonaise, lemon juice, mustard, salt and pepper to taste. Add to chicken and mix gently until combined. Refrigerate until ready to serve.
