Spinach Turkey Meatballs - Gluten Free

I've been experimenting with food lately. I noticed that we only use spinach to make a salad, combine it with eggs or simply saute it.  I was getting tired of making ground turkey meatballs until I thought of adding spinach! Yes, spinach! It's tastier and I fee like I'm not just eating pure meat! This recipe is definitely worth trying! 

1- 1.25 ground turkey
2 garlic cloves
1/2 onion (large) or 1 medium
1/4 tsp oregano
4 handfuls of fresh spinach or around .5 ounces (this really depends on how much spinach you want on your meatballs)
1/8 tsp Thyme
1 large egg
3 tablespoons of chicken broth (gluten free)
1 tbs Worcestershire
salt and pepper
1/8/ - 1/4 tsp red pepper flakes 
olive oil for sauteing 
around 3/4 cup bread crumbs ( I used gluten free, schar

Preheat oven to 400 degrees F.
1. Saute garlic and onions in olive oil. Once onions are cooked, put the spinach in and stir.
2. Once the spinach is cooked, put the chicken broth in. Let it cook until there's almost no liquid left in the pot.
3.  When done, let it cool.
4. In a medium bowl, combine ground turkey oregano, thyme,Worcestershire,salt, pepper, red pepper flakes and bread crumbs. Combine well.
5. Combine the spinach mixture into the bowl.
6. Spray oil into a baking dish. 
7. I made about 17 meatballs when I used 1.25 ground turkey. 
8. Bake for 20 minutes then flip. Bake the other side for another 10 or until the middle is cooked.
9. Serve it with over spaghetti and your favorite sauce or  make meatball sandwiches! 

For anyone who is gluten-free, I used brown rice pasta and Barrilla - gluten free pasta. Don't forget to sprinkle some parmigiano-reggiano cheese.

Fall Foliage - Cream Pants and Fall boots

Yesterday was the first day when I actually felt like it is fall. Breeze and more leaves on the ground. Good bye summer and hello boots season.

Shirt: This shirt is from LOFT. It is a size XS regular and if can tell, it is a bit loose and long on me but it is very comfortable. I would have gotten it in petite but it is not available.  If you look closely, the collar is beaded which is a plus to me. I thought that the beaded collar would be enough of accessories but now that I am looking at the pictures, a bright neck necklace like this would make the outfit much better. I give this a 3.5 stars out of 5. I would give it a 4 if I got the petite size.

Pants: Snow pants - Cream pants are awesome in the fall. These corduroys pair are comfy and it fits my legs perfectly. It makes your behind look nice and tight! The length is also perfect for my height. This is a 2 petite from LOFT. I give this a 5 out 5 stars.

Boots: I was contemplating between using my brown or black boots. Brown boot wins! It matches my pants much better. I was also wearing a brown jacket over my shirt which I should have used for this picture. When you click on the link, the boots are darker in person than it is on the website. Darker in a good way. I've had these boots for two years now and I love them. I give these 5 stars.


Baked French Fries

Trying to find a more healthful way to eat fries? BAKED em'

1 large baking potato (I used russet potato)
1 tablespoon olive oil 
1 teaspoon paprika
1 teaspoon garlic powder 
cooking spray

Preheat oven to 450 degrees Fahrenheit
Cut fries in 1/4-inch-thick matchsticks
Spray cooking spray on a baking pan
combine olive oil, paprika, garlic powder and salt in a bowl. Coat the fries well with oil and spice mixture. 
Spread fries into the sprayed pan (Make sure they are not too close together. Use a second baking pan if necessary)
Bake fries for 30 minutes then flip them. Bake it for another 15 or until it is golden brown and crisp
Season fries with more salt (optional)

If using as a side dish,  this serves 1-2

Crispy Baked "Fried" Chicken - Gluten Free

I made a more healthful and tastier "fried chicken" by marinating it overnight and baking it. Because I marinated it for 12 hours, it is very  juicy and by baking, it added a little crunch when you bite into it. Add you favorite vegetable side dish or mashed potatoes with gluten free gravy, which was able to  purchased here (you can also buy it at your normal grocery stores). Try this recipe and let me know what you think! 

c/o Pills

2 cups buttermilk
2 tablespoons lemon juice
1 table spoon hot sauce
3 garlic cloves mashed
1 teaspoon thyme
1-2 lb chicken (preferably legs, thighs, wings)
1 packet of mashed potato flakes (gluten free) (Most groceries usually labels their mashed potatoes 'gluten free', Betty Crocker is one of the brands that has them,)
2 cups bread crumbs (gluten free) (I used Schar gluten free bread crumbs)
3/4 cup parmesan cheese
1 teaspoon salt
2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon ground pepper

2. Marinate chicken with buttermilk, lemon juice, hot sauce, thyme, and garlic for about 12 hours.3. When ready to cook, combine potato flakes,breadcrumbs, Parmesan cheese,salt paprika,garlic powder, and pepper in small bowl. Dip each chicken in bowl and coat it well. Placed the chicken in a (lightly nonstick cooking sprayed) 13x9 baking pan.

1. Preheat oven to 400 degrees
4. Bake uncovered for 50-60 minutes or until chicken is tender and golden brown. 

Let's Take a Walk, Toms

My main focus of this post is to explain why I like and support TOMS. Not only they offer cool designs and comfortable shoes,  but also when TOMS sells a pair of shoes, a pair of shoes is given to a child in need, and when TOMS sells a pair of eyewear, part of the profit is used to save or restore the eyesight for people in developing countries. I always feels great when I know I'm helping someone in need in anyway weather it's giving directly or through a company. This idea is a good aspect of their marking and their business strategy.

About their shoes: Toms shoes are known for their slip on shoes, which happens to be my favorite style.  The price ranges from $48-68 but a couple designs goes up to $124-180, (like this style). Their slip on shoes comes in classic (which is very popular)  biminis and seasonal classics. TOMS shoes runs big. I've had multiple pairs from them and I usually choose a 1/2 size smaller.

The classics are described as:

Sandals - I've tried these beauties in store and they are so comfortable! They are rated 4.5-5 stars and I totally agree! and it looks great with jeans. They are around $69 or less. Check out their website because some are even on sale right now!

Wedges - My choice can be seen on this post. Their wedges range from $69-130

Flats- I chose the burlap cassandra becuase I think it is perfect for fall. I do not own or have not tried on any of thier flats but if you have, I'd like to know how they are and how they feel on your feet. Thier flats are around $79-84.

Lace-ups- I chose the black canvas women's cordones because I don't think I can pull of the rest of their  lace-ups styles. I also have not tried any of their lace-ups so if you have, please share your feedback on them. I would love to know. Their prices  range from $69-114.

Boots- I chose their Taupe Suade Woven Women's Alpha Boots because their are so unique to me and so out of my comfort zone ( I do not normally wear high tops/ mid thigh boots). I'd like to get them and see how they look with a pair of jeans. They range from $98-120.


Blacks and Mustards

1.When purchasing a shirt, I usually go for a brighter, more girly shirt so when I tried this on, I was scared that I was going to look too  'mustardy'. I was wrong. Pairing it with black jeans didn't make the shirt look too much
2. I bought the shirt in XS. If you look closer though, it is sheer, so you do have to put a cami underneath. With a cami, I think it still fits perfectly. Not too tight, not to loose. This shirt is very comfy and light. 
3. I recommend this shirt- The color and material feels and looks great specially for the fall season. 

Scarf: Going through my closet, the scarves I have are all in bright colors. My bright color obsession unfortunately did not work wearing this outfit so I purposely bought this scarf (something I wouldn't buy alone) just for this outfit and I think it looks great! I also think white, burgundy, grey or anything in darker color  will look great.



Roasted Brussels Sprouts

Facts about Brussels Sprouts:
Brussels sprouts are a cruciferous vegetable, found in the
same family as broccoli and cabbage. They are a great

fatty acids. Perhaps most notable, Brussels sprouts have

calories, they aid in your digestive health and help you
feel full on fewer calories!

1 lb Brussels sprouts
3 tablespoons olive oil
3/4 teaspoon salt
1/2 ground pepper

Preheat oven to 400 degrees F.
Cut off the ends of the Brussels sprouts. Take off any extra leaves.
Cut each in halves
Mix them in a bowl with olive oil, salt and pepper.
bake it for 45-50 minutes.
Once they are browed, sprinkle some more salt (optional)
Serve with your favorite main dish
