Chicken Adobo - A Famous Filipino Dish

This dish is one of the first Filipino dishes I've ever made and probably the best tasting one.  This dish is on our menu at least twice a month. I like to cook a lot at once because I personally think that the longer it's been cooked, the better it taste. Like a left over Chinese food! It gets better and better. For everyone who prefers white meat, you can try cooking with chicken breast but I can't promise you that it will taste as good as it should. I hope you enjoy and happy cooking!

There are 3 key things that you MUST do to make this a great tasting dish. 
*marinate for a long time. 
* brown the chicken after simmering for an hour (my mom thought me this and it makes a difference)
* Simmer


 5 pounds - Chicken Thigh/Chicken Legs
1/2 onion (optional)
3- tomato
1 1/2 head bulb - garlic
3 cups - white vinegar or apple cider vinegar
1 cup - soy sauce
3 - tablespoons garlic powder
salt and pepper

1. Marinade chicken in vinegar, soy sauce, tomatoes, and 1 bulb of garlic cloves.
2. Put it in the refrigerator for at least 3 hours
3. Saute the rest of garlic and onion
4. Pour marinade
5. Simmer on low-medium for 1 hour or until the chicken is tender. Do not stir.
6. Make your rice while you wait for your  chicken to cook
7. After the chicken is tender stir gently then put on a separate plate.
8. Oil a pan. Brown the chicken on the pan then put back on the pot after it is nicely brown.
9. Simmer for another 5 minutes. Serve with rice.

What do I like about the dress? 
* It is flattering and slimming. 
*I like the hidden pockets. 
* Perfect length for heels or flats. 

What don't I like about the dress?
* Dry Clean - Who wants to spend money on dry cleaning? Not me. 
* The bead work on the front is very fragile. (Ethan, my nephew, wouldn't stop ripping the beads off the dress) 

What did I like about Xaviars? 
* Parking Validation  - with Xaviar's stamp, it's $3
* The table are well spaced out - a lot of privacy
* Clean Bathroom - always a plus to me
* Their dishes has some unique ingredients ( the mushrooms Mitchell had on his Scallops dish) - wish they served more of it though. 
* Service was good - It was expected since it's a $$$ restaurant 
* The way the waiter described their food was very detailed.

What didn't I like about Xaviars?
* We ended up sitting directly in font of the sun that we ended up wearing our sunglasses inside. They couldn't move us to a different table. Their curtains were able to pull down on some areas but not on ours. (They did give us free dessert because of it but a restaurant like this should have a solution for an easy problem)
* The center pieces could be better. They should make it more simple instead of putting a giant fish bowl with a little plant inside. What a waste of space. 
I think that their food could be better. My dish ( Duet of Heritage Pork, see above) was nothing special. Very similar to a Filipino dish called Liempo which cost half the price. I personally think that they over charge dishes in this place because of the name of the owner and how he competed with Bobby Flay on show, The Iron Chef. Sure, they put expensive ingredients on their dishes but I've had better tasting food for less. I'm picky when it comes to "expensive food." I expect every detail to be almost perfect. 

Chicken Enchiladas

I made this during the weekday after a long day at work. It was easy to make and Mitchell wouldn't stop talking about how good it was. I used Trader Joe's Enchilada sauce not only because I needed to make a quick meal but also because of how their sauce tastes compared to other brands. I like mine with a strong cumin flavor and this sauce has just that.

1 pound - Ground Chicken 
1 medium - Onion
9 - corn tortilla 
1 can - olives
1/4 cup - chicken broth 
fried eggs
sour cream
cole slaw 
salt and pepper
1 tsp - cumin
1 large bag of  mexican cheese 

1. Coat large pan with oil. Season chicken with salt and pepper.
Brown chicken over medium heat along with the onions. Pour 1/4 cup chicken broth.When it is no longer pink, it's cooked. Sprinkle cumin and garlic powder. Add the can of olives. Mix well and sent aside.

2. We need to soften the tortillas: Heat store bought or homemade enchilada sauce on low heat. While waiting, fry each tortilla on a separate pan for 5 seconds each sides. Then dip it in the sauce. Set aside. Repeat for all 9 tortilla.
Option/Alternate: You can also microwave tortillas for 30 seconds. This will soften the tortillas making it easy to wrap the chicken later. After microwaving, dip it in to the enchilada sauce and set aside.

3. Preheat oven 350 F.  Coat the bottom of one (13 by 9-inch) pans with a ladle of enchilada sauce.

4. Spoon about 1/4 cup of chicken in to tortilla. sprinkle some cheese. and wrap in slowly. Place it on to the coated pan with the seam side down. and repeat until all 9 tortilla are done.  The more packed the dish is the better it will hold the chicken and tortilla.

5. Top with remaining enchalida sauce and cheese

6.Bake for 15-20 minutes.

7.While waiting fry one egg per serving. Put it on top of the baked enchilada dish along with some sour cream and coleslaw 

Homemade Enchilada Sauce:

3 tablespoons vegetable oil
1 tablespoon flour 
1/4 cup chili powder
2 cups chicken stock 
10 ounces tomato paste
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt


In a medium saucepan, heat oil, add flour. Stir occasionally with wooden spoon. Cook for 1 minute. Add chili powder, cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir with spoon to combine. Bring to boil. Reduce heat to low and cook for 15 minutes. The sauce with thicken. Add more seasoning to taste. 

Homemade Cole Slaw:

1 medium head cabbage shredded
1 carrot, shredded
2 cups mayonaise
1 cup cider vinegar
1/2 cup sugar
3 tablespoon dried minced onion
salt and pepper


1. In a large bowl, combine shredded cabbage and carrots. 
2. Add 2 cups of mayonnaise in a bowl and mix it with sugar, vinegar and dry onion.
3. Pour dressing over the cabbage and carrots. Refrigerate and serve fresh.

Summer Linen Dress

I wore this dress for my cousin's baby shower. It was hot and humid that day and this linen dress was a perfect dress to wear for it. The fabric is very light that it helps your skin breath and not sweat too much. I think that this linen dress is a great pick for a hot/humid day.

Anthropologie Descanso Sunday Dress

A perfect dress to wear to Sunday Mass! The dress looks better on than on their website . If you're planning on getting this dress make sure to size up! I'm in New York right now to visit my parents and it's a beautiful day to eat at an outside seating restaurant. I hope it's as nice there as it is here. Have a fantastic Sunday!!

Horse Barn Anthropologie

Our trip to Maine to spend time with his family was a great vacation that I haven't had in a while. Lots of food, lots of family time and lots of HORSES! MS's mom takes really good care of Chip,Ash,Baby, Rita,Blackberry and the new baby. They are all equally beautiful and all equally love to eat carrots, apples and hay ALL DAY! Trot Trot.
