Polka dots/ gold accessories

I was a bit hesitant on wearing a very light colored sweater with white pants because I thought that it might be too light that it will look like I'm wearing all white. Nope! the gold accessories tied this outfit together. I'm not sure what you think but I think the gold accessories (necklace, belt, sunglasses, bag) became the highlight of this outfit. Id love to hear from you! Constructive criticisms welcome.

Quinoa and Black Bean Casserole

 This is my first time ever cooking quinoa and it came out great. The quinoa makes this whole dish. It's feels light in my stomach yet so full of flavors. The beautiful colors in this dish made me even more excited about it.  This is good to eat as a dish or a dip.  Let me know what you think!

2 cups- Quinoa 
1 small onion minced
3 garlic gloves- chopped
1 red pepper
1/2 bag frozen sweet corn
4 1/2 cups cooked black beans 
1/2 teaspoon cayenne pepper
1 small lime
1 1/2 teaspoon chili powder
1/3 cup chopped fresh cilantro
1 1/2 teaspoon cumin 
2 cups Mexican cheese
sour cream 

1. Preheat oven to 350 degrees. 
2. Cook quinoa by following directions in the box. Substitute vegetable broth instead of water to make it flavorful 
3. Heat oil in a large skillet over medium heat. Combine garlic and onions together. Sautee until softened. Add in peppers and corn. Cook for 3-4 minutes 
4Add lime, cayenne,chili powder, cumin and fresh cilantro. Stir to combine. Season with salt and pepper. Taste. If you want more flavor, add 1/2 teaspoon of chili powder and cumin and a dash of cayenne. (It can get too spicy, if you add too much of cayenne, so taste as you season) 
5. In an oiled baking dish. Add a layer of quinoa, then a layer of the vegetable mix. add a thin layer of mexican cheese. Repeat this until the dish is full. Top it with the rest of the mexican cheese and bake it WITH FOIL for 20 minutes. Remove the foil and bake for another 10 until the cheese is melted and the sides are bubbling. 
6. Take it out and let it cool for 10 minutes. Serve it with some corn chips and sour cream.

Pretty in Pink


When I bought these pants (J.crew, final sale , in ) I thought to myself, UH OH!, they are brighter than the picture online  (bought online) AND since these were final sale I thought, I was screwed. After trying out different tops with this, I found the perfect match! Polka dot or anything with pattern that's in a darker color, would match. This is my first time wearing this pants and as the day goes, the more I like the way it looks. After all, I'm glad these were final sale!

Notes: The pants is a size two and they are a little big on my thighs but I believe that J.crew's CITY FIT are made looser than regular pants, I could be wrong though, maybe I'm just losing weight, (kidding!)

Trader Joe's Favorite - Veggie burger + my homemade sauce

Don't feel like cooking? I get home from work and I'm exhausted 
most of them time. Since it takes a lot of time to make my home made dishes usually 1-2 hours to cook, I try to NOT do that at least once a week.  As you all know, I love TJ' and this is one of the things I get every time I go there. I made it with my homemade sauce and topped it off with some fresh arugula.


TJ's veggie burger (featured on the right) - Trader Joe's 
American cheese (or your choice of cheese)
Hamburger buns( I use regular sandwich bread because I like how it's thinner and lighter than regular hamburger buns)
2 slices of thin tomatoes

Sauce: ingredients can be bought at your grocery store or target /Trader Joe's 
1/2 cup mayo
2 tablespoons Dijon mustard
1 teaspoon ground mustard
2 tablespoons ketchup
1/2 tablespoons lemon juice
1/2 tablespoon Worcestershire sauce or soy sauce
1 teaspoons paprika
1/4 teaspoon salt


  1. I make my sauce first because I like my burgers warm, I'm sure you do to! In a small bowl, combine all ingredients, set aside.
  2. Cook the burgers on a skillet with very little oil. Melt your favorite cheese on top. Once the patty is browned, has some color and the cheese has been melted, take if off the stove. 
  3. Take your bun, spread some sauce one each bread ( I like mine saucy) then place a TJ's veggie burger on top. Now, go crazy and put your favorite toppings! I like mine with a little tomatoes and a lot of arugula.

Classic Strawberry Shortcake

Happy Easter everyone! This is a perfect dessert for Easter. Something colorful and sweet yet very QUICK to make.  I've been thinking what to do with my strawberries in the fridge since they don't get eaten much because of the amount of food I have. (I forget all the time that I have fresh strawberries in the fridge, when strawberries are something you cannot forget to eat because it will go bad quickly) Anyway, why not make dessert out of them  : )



1 pound strawberries- stemmed and quartered
8 tablespoons sugar
1/4 cup water

Homemade biscuits

2 cups all- purpose flour
2 teaspoons baking powder
1/4 teaspoons baking soday
2 tablespoons sugar
3/4 teaspoon salt
1 1/2 cups heavy cream

Whipped cream:

1 1/2 cups heavy cream, chilled
3 table spoons sugar
1 1/2 teaspoons vanilla extract


In a medium sauce pan, combine fresh strawberries sugar and water. turn on low heat (do not boil) for 15-20 minutes stirring constantly to let the juice out.  Once you see the water become red and the sauce taste sweet after tasting it turn off heat and put in fridge to cool it.

Fresh biscuits:
Preheat oven to 400 degrees F.
Stir together the flour,baking powder,baking soda, 2 tables spoons sugar and in salt in a medium bowl. Add heavy cream last and mix until combine. Place mixture in an ungreased 8 inch square pant and bake for 20 -25 minutes or until the top is golden brown. Take the biscuits out and let it cool on the rack.

Whipped cream:
Using a mixer, beat heavy cream, sugar and vanilla until soft peaks form. It will take about 2 -3 minutes.

Cut the biscuits into squares. Pour some strawberries on each square then top it off with some whipped cream (or a little extra) Serve fresh!

Red/White Friday

Happy Friday everyone! I know I'm not supposed to wear white jeans until memorial day but I couldn't help it this morning. I have just bought blazer,shirt,bracelet that is featured from LOFT yesterday (40% off orignial price!). I can wear this red blazer with black pants but I just wasn't in the mood to. I got ideas from pinterest  to see what kind of shirt/top to wear my outfit with. I knew that the shirt couldn't be plain. It needs to have stripes (black white)/patterns (not too crazy)or anything to make the outfit not too plain SO.... why not wear the the shirt I bought!

A little Secret:
Here's what I do when I shop. I try to pick NOT only what is cute/ unique in the store but also pick out what matches with most of my stuff.  In other words, I as I shop, I create an outfit in my head. Would this shoes match with any and  importantly MOST of my stuff? would this top match with any of my pants?
Sure, buy something that's completely different from your wardrobe, why not!It is always good to get out of your comfort zone, but for someone who has a budget, this is a smart way of shopping.

The shirt is an S and it is a loose on me but I like it that way.

Tofu Stir Fry

Baked Tofu Stir Fry With Sweet Ginger Soy Sauce Served Over Rice.

Do you think that tofu is too soggy, wet or soft? Try this recipe, you'll start loving eating TOFU

14 ounce extra firm tofu
2 1/2 cups green beans
3 gloves garlic
1 cup onions
1 1/2 cup diced carrots
sesame oil  and olive oil OR just olive oil. never use sesame oil by itself.
1/4 cup soy sauce
1 Tablespoon fresh grated ginger or 1/4 teaspoon of ground ginger
2 Tbs brown sugar 
1 Tbs agave/maple syrup OR honey
3 Tbs flour or 1 TBS cornstarch

The trick is to dry the tofu. How? by baking it! but first, there are a couple of steps before baking the tofu.

1.Remove tofu from the package. Wrap it well with multiple layers of paper towels (2 layers).Set it aside. Then place a skillet, heavy bowls or something heavy on top.(I used a skillet) 
2. Let is dry for 30 minutes. Change your towels if it gets too wet. 
3. Preheat oven to 400 degrees. Bake tofu for 30 -35 minutes. Flipping them once half way through. 
4. While waiting for this to bake. Cut all your veggies. and make your rice ( if your serving it with trice) When the tofu is done. let it sit to make it dry it out more.
In a wok or large skillet over medium heat. Add oil then add onions and garlic, once the garlic gets a lil brown. add the rest of the veggies. It will take about 7-10 minutes. Stir often. 
5. When vegetables are soften and have some color. add the sauce. then stir.
6. It should thicken. Add the tofu and stir to coat. 
Cook for another 2 minutes. Then serve over rice.

Pork chops and roasted Brussels sprouts

 I love TJ's. (Trader joes). Eventhough I hate falling in line to park my car and dealing with the long line checking out, I find myself at TJ's at least once a week). I bought two pork chops and for a week I had no idea what to do with it! As I gathered what I have in my kitchen, I've decided to make a panko crusted pork chops with a side of roasted brussels sprouts.

Total Time: Estimate of 30-45 min.
2 pork chops
salt and pepper
4 tbs of flour
1 egg
1 cup panko bread crumbs (or Italian bread crumbs)
1 tsp paprika
1 tsp garlic salt
1 tsp Worcestershire sauce

1. In a small bow, combing salt, pepper, paprika and flour. In another bowl, combine egg with Worcestershire sauce. Put flour in one small plate. 
2. Coat chops with flour, then dip the coated chops in eggs, finally coat it with panko bread crumbs. 
3. In a large skillet ( I mean this, you want space between your chops). Heat olive oil over medium/low heat. Don't burn the crust.
4. Brown both sides (5-6 minutes); turn and continue for another 5 min
5. Make sure the middle is cook

You will notice that the crumbs sticks to the chops really well and that is because of the flour. Flouring, the egg  and the bread crumbs will keep your chops crisp. 

I used apple Jelly because I didn't have time to make a sauce and it was delicious. If you happen to have time try this 
1/2 pineapple diced
1 tomato
1/2 red onion, minced
1 tbs cilantro leaves, chopped
1 lime, juiced (or lime juice, store bought)
salt and pepper. 

Mix everything in one medium bowl and spoon salsa on top of pork chops. 

Fresh or frozen brussels sprouts
olive oil
salt and pepper
garlic salt
Combine all ingredients in one bowl. Place Brussels sprouts in baking sheet. Bake it for 30-40 minutes at 400 deg. Shake the baking pan often to make sure the bottom isn't burning. Wait until parts are golden brown. Serve hot.
